ABOUT: Atoka is a soft-ripened cheese likened to many goat cheeses but it is made with cow's milk for a more mild and approachable smooth flavor. It is a play on two textures, a drier, crumbly inside with a distinct cream line separating the outer smooth, buttery layer outward towards its beautifully patterned rind.
HOW TO USE: This cheese is extremely versatile and pairs well with fruits, nuts, crackers, meats and a multitude of wines and other drinks. Crumbled on salads or any place one might spread butter. Eric, the cheesemaker's, favorite way to use it, is simply toasted on French bread with fig jam!
