Turnip roots can be stored in a refrigerator crisper drawer for several months, at temperatures between 32 to 40 degrees Fahrenheit. Another common way to store turnipsis in a root cellar covered in sawdust. You can store them under the ground until you are ready to use them.














Smoky Grilled Turnips w/ Lemon Thyme Aioli (4 Servings)

Ingredients
3 medium turnips
2 tbsp. Extra Virgin Olive Oil 
generous pinch of smoked paprika 
salt and pepper to taste


Aioli
1 large farm fresh egg
1 clove garlic 
1 + 1/2 tbsp. lemon juice 
zest of one lemon 
1/2 tsp. Dijon mustard 
1/2 tsp. finely chopped thyme leaves 
1 cup vegetable or grape seed oil


Preparation
Aioli: Place all ingredients, except oil, into blender then slowly add oil while blending, allowing the ingredients to emulsify into a smooth homogenous sauce. This is a great job for your handheld immersion blender or small to medium-sized blender. Season with salt and pepper to taste. 

Turnips: Wash and peel. Cut into 1/4” disks. Toss in olive oil, salt, pepper, smoked paprika. Grill on high, 2-4 minutes on each side until tender. Alternatively, cut into 1” chunks and skewer to make kebabs. This recipe is versatile — try it with radishes!
