ABOUT: Berkabaw pork has become the primary focus hog at Autumn Olive Farms. The AOF Berkabaw Hog represents farmers Clay and Linda's 6-year effort thus far to raise “The Perfect Pig.” Purebred Ossabaw Island and English Berkshire were crossed to several ratios to achieve particular outcomes. AOF Berkabaw brings many of the marvelous qualities of the Ossabaw into the marketplace at a more affordable price point. Sustainably raised with no added hormones in the foothills of the Shenandoah Mountains in Virginia.

HOW TO USE: Cook to 160 degrees. Make your own cured guanciale. Use as seasoning for beans or leafy greens. Add to hearty stews or simply eat as fried bacon.

INGREDIENTS: Pork, salt, brown sugar, sodium nitrate, sodium carbonate as buffer, less than 2% propylene glycol.
