ABOUT: Smooth, silky, and versatile with a subtle grassiness, this cheese is perfect for melting, grating or simply eating with a baguette and a glass of wine. Inspired by cheeses produced high in the Pyrenee mountains of northern Spain’s Basque region. As they age for 90 days, our crafter's hand wash and flip each one of these brined orange beauties over and over again until they’re ready.
HOW TO USE: Use in a gourmet grilled cheese sandwich or panini with sliced apples, grainy mustard, and your favorite bread. Slice and serve on a cheeseboard along with honeycomb, charcuterie, and garnish with fresh chives. Pair with a Sauvignon Blanc or a late-harvest Reisling to bring out the grassy flavor of Cabra LaMancha.
